Fruity Rainbow Butterfly Treats

How's that for a name? OK, so I said A while back I would post this as soon as I had all of my ingredients and my photograper handy at the same time...that never happened. I finally ended up making 1/3 of a batch (which only made 3 butterflies) and taking this sorry little picture my self, but here it is. The recipe for these is exactly the same as the crispy rice treats except for of course that you use Post Fruity Pebbles which are "gluten free" instead of Rice Crispies cereal.

I would like to make a note at this point that I did call Kraft (who owns Post cereals) to ask about cross contamination. They say that if there is any chance of cross contamination at their plant it will be listed in the allergy warning, HOWEVER this is only for wheat, not barley. oats etc.! Also, the gentleman told me that the labeling is only for what happens in their plant, if any ingredients were cross contaminated before they entered the plant Kraft foods would have no way of knowing it. So, there's the disclaimer. All in all I don't know that these are really any safer than the orginals if you have celiac. Emily does not have celiac, she only gets a little itchy with gluten, so here we go living on the edge again!

And now the recipe:

3 T Dairy free margarine
6 C Mini marshmallows (make sure they are safe for your allergies)
6 C Post Fruity Pebbles cereal

In a large pot melt the margarine over medium-low heat. Add the marshmallows and stir until completely melted and no lumps are left. Pour in the cereal and stir hard until thoroughly mixed. Pour into a greased 9"x11" pan. Coat your hands with margarine and flatten mixture into pan. Cool treats in pan and then turn them out onto a cutting board. Using a butterfly cookie cutter (plastic is best, metal tends to bend out of shape) cut out as many shapes as you can. My daughter Nikki pointed out to me this time that you don't HAVE to eat the scraps, they can be squished back together to get more cuttings just like rerolling cookie dough (of course we only erntertained that idea momentarily...then we ate the scraps!).

  1. Very cute! We just realized a few weeks ago that Pebbles were gluten free. I had no idea! It never occurs to me to check the regular cereal isle. I did one time and realized he could have Lucky Charms. Now that he's added oats to his list of allergies and we lost the Charms, I started looking again and found the Pebbles.
    Your butterflies are beautiful and look very yummy!!

  2. Thank you! Like I said, they are gluten free enough for us. I think though that if anyone is highly sensitive (like my mom who gets very ill) they should stay away from all the cereals that are not certified gluten free. Emily also eats Lucky Charms even though she shouldn't, the oats are not gluten free and the marshmellows have geletin (beef). I weigh my pros (simplicity) against my cons (itchy skin) with each choice I make. Ya' know? It's nice to hear from you, your site is still one of my favorites! :)

  3. These look great! And you beat me to it: I just made my first batch of GF rice krispy treats this week. Very fun. Rice Chex are GF. It even says so on the front of the box--I took close-ups to post on my blog.

    I commend you for calling Kraft and getting at least some kind of answer.

    I'm planning on making some "traditional" rice crispie treats with Erewhon Gluten Free Crispie Brown Rice cereal...but these look much more fun! I think I'm too sensitive for them though.
    Since you're working with multiple allergies (as I am!) I wonder if you've tried Namaste mixes? They're my favorite... https://www.namastefoods.com

  7. I make the bread mix about once a week. I've baked it in the oven but now I do it in my bread machine and it's great. We also love the brownie mix (with extra chocolate chips, of course)We've also loved the muffin, blondie, cookie and chocolate cake mixes.

  9. It must be summer and we don't want to turn on the ovens! I was just surfing through the Kellogg's Rice Krispy Treats recipe website today and thought about getting creative like you did...unfortunately, Lazy Mom took over and I just sprinkled with colored sugar and called it good. Those look awesome. I'm inspired!

  13. oh, thank you, thank you, thank you! My little 19 month old girl just got diagnosed celiac, and I am at such a loss for finding treats for her that I can throw in the car or diaper bag. I had heard about these treats, but couldn't find a recipe that didn't require the expensive, organic, gluten-free Rice puffs as well. Thanks for providing a recipe that those of us who are poor can still make for our GF kidlets.
