Hamburger Buns

These are obviously not as soft and fluffy as the cheap white buns you get at the store, but they are comparable to whole wheat buns. These buns are best if used the same day they are made. If you have leftovers freeze them immediately, then when you are ready, microwave them for a bit and they soften right up. If you like your buns toasted, that will work great too.

1 Bag of Pamela's Wheat Free Bread mix
2 Eggs worth of prepared Ener-G egg replacer
1/4 c Oil
1 1/3 c Warm water

Pour the warm water, oil, and prepared egg replacer into a mixing bowl. My own special way of knowing if the water temperature is right...I stick my finger in it, the water should feel like my daughters head when she has a low grade fever (I know, I'm an odd duck). Add the baking mix, then the enclosed yeast packet on top of that. Mix on low speed for 30 seconds, then on medium-high for 2 minutes.
Cover a baking sheet with parchment paper. Put the dough out in half cup blobs. I used a large spring action ice cream scoop. You should have about 6 or 7 buns. Wet your hands with warm water (or you can coat your hands with oil) and pat down the blobs, shaping them if needed, until they are round and about 1" tall. Re-wet/oil your hands before doing each one.
Put the buns in a warm place to rise for about an hour or until doubled in height.
Preheat oven to 350 degrees. Bake for 30 minutes or until tops are golden and buns sound hollow when you thump them. Cool completely, then slice across the middle with a sharp serrated edge knife.
These are perfect for burgers, but they're awesome when used for deli style sandwiches too!

P.S. Don't forget that you can buy Pamela's bread mix by the case (6 bags) through my Amazon link which is to the right. I go through about 2 bags a week and I find that it is much cheaper to buy through Amazon. Do you know anyone with a combination of these allergies that we have:
wheat (we need to be GF)
egg
nighshade family (tomato, potato)
soy
citrus
dairy

I need help with dinner time meals! We've been at this but just recently added soy, so out went the dairy-free butter (soy)

Hi NanaJan and welcome. I can't think of anyone specific off hand, although I'm pretty sure I have at least one reader with the same allergies and if she sees your comment I'm sure she'll get ahold of you. Have you been here http://www.kidswithfoodallergies.org ?
It's the Kids With Food Allergies support group. When I first started on this journey I was a member (if you can't afford the fee you can send them an email and they will waive it). There are people there dealing with every allergy, and every combination of allergies, that you can imagine, and they have a huge recipe database that you can search by allergens. Best of luck to you. If I think of someone specific I will let you know.

I also wanted to let you know that you can use the Pamela's bread mix mentioned in this post. It is one of the few mixes I know of that does not contain potato starch. Make it with olive oil and an alternative egg replacer like the flax egg replacer in my french toast recipe. If you see any other recipes of mine that are OK for your allergies except for the potato starch, you can replace the potato starch with corn starch.

Oh yummy, potato buns! I miss "soft and fluffy" so much. We made sloppy joes with these the other day and they were really good. That's my next post if my world would slow down long enough for me to write it. :)

Safety Information for Pamela's Bread mix (from Amazon):
Products are produced in a facility which also makes products containing: peanuts, tree nuts, dairy, eggs and soy.
My son is allergic to all these. Do you know of another brand of bread mix I can use.

As a matter of fact, I have switched brands since writing this.
We now use Bob's Red Mill bread mix. It does contain soy lecithin though. Let me do some searching, if I find something else I will post it here.
