I have decided to take it easy on myself this year. I realized that I just don't have the time or the energy to make a ginger bread house, then I patted myself on the back and said "that's OK". However, I did still want to post my egg-free royal icing recipe, so we decided to make gingerbread people instead. For this I did not even need to create a recipe, I borrowed this wonderful recipe from Janeen at Mom's Food Allergy Diner, which is egg free, dairy free, gluten free, and nut free. I didn't have any Bette Hagman's Gourmet Light Flour Blend so I had to play with the flours a little bit. My final flour blend was:
1 ½ c Sorghum flour
1 c Tapioca starch
1 ½ c Rice flour
½ c Cornstarch
½ c Potato flour
This is a whole cup more flour than the original recipe called for, but it worked well for us. It could be the humidity or the altitude, who knows. After baking the gingerbread people, the girls decorated them with egg-free royal icing. So, here are our little gingerbread people (the ones who haven't been eaten yet) saying "Merry Christmas everyone"!

ack! okay, I'm going to follow your note and reduce the flour a bit. The larger flour quantity didn't work - but I realllly need a cookie today.

I hope your second batch turned out well and was just what you needed! Like I said, the original recipe only called for 4 cups and I used 5. Yikes! Now I'm wondering if ALL of my recipes only work for me and I'm screwing people up all over the nation??? That's a horrible thought.
um. can I admit that I wimped, and went for a boxed mix? Which was pretty darned good, actually, but still wimpy.
I'll be trying the recipe again, and promise to let you know if I have any trouble.
Hey, you've been so quiet. Even more so than me. Are you taking a break, or still unpacking boxes from your move?
I'm in a bit of a slump I'm afraid. We moved, I got a job, we found out my 14 yr old vegetarian (who was living on mac and cheese, pizza, pasta, and cheese sandwiches)can't have gluten, and my husband is working half of what he was...I'm just a little overwhelmed I guess. The creative juices just aren't flowing. Thank you for thinking of me though! I hope to get back to it soon, I just don't know when. I hope you are well!!! :)
